Very small amounts of some allergens, such as nuts, can cause adverse reactions in people with food allergies, including potentially fatal anaphylactic shock. It is therefore important that food products are clearly labelled and adhere to industry guidelines to ensure that consumers can make informed decisions when purchasing foods that might contain allergenic ingredients.

As a professional labelling consultancy, we have been shocked as to the lack of knowledge and understanding of some small companies as to what an allergen is. This is the basics of food labelling and a public safety requirement. Once the obvious allergens in a product have been confirmed, then the allergens that may be in the product, but hidden as a processing aid have to be identified.
